Healthy Two Bean Chili

I'm running out of time here in California to get cold, chili making days, so I thought I'd throw a pot together, which may be my last for a little while.  :( 

I love chili and have tried so many different recipes, and through experimenting this has become my favorite chili by far.  I know there are loads of chili recipes out there, but hopefully you will enjoy this one.  The Super Bowl is coming up and this would be a great addition to the party.

Let's do this!
1/2 pound lean ground beef
3/4 pound lean ground turkey
1 medium yellow onion, diced
1/2 red bell pepper, diced
1 poblano chili pepper
4 tbsp. chili powder
1/4 tsp. dried oregano
1/4 tsp. celery seed
1/8 tsp. cayenne pepper
1/2 tbsp. cumin
kosher salt to taste
fresh ground pepper to taste
1 14.5 oz. can diced tomatoes, undrained
1 14.5 oz. can red kidney beans, rinsed and drained
1 14.5 oz. can cannellini beans (white kidney beans), rinsed and drained
1/2 cup beer
1 cup beef broth
1 cup V8 juice
2 tbsp. olive oil

Heat a medium dutch oven or heavy bottomed pot over medium high heat.  Add olive oil, onion, bell pepper and poblano pepper.  Saute for about five minutes or until they start to soften a little.  Add the ground meats, breaking with the back of a wooden spoon.  Add some kosher salt and pepper.  Add the beer.  Cook until meat is done and no longer pink, and most of the beer has evaporated, stirring and breaking the meat up occasionally.


 
While the meat is cooking, add half of the red kidney beans and half of the cannellini beans to a bowl.  I love cannellini beans because they are so creamy and add a slightly different texture to the chili, instead of just using red kidney beans.  Mash them with a potato masher until they are broken up some.  I do this because I don't like a lot of beans but I like the texture and flavor they give to the chili.  You could also put them in a food processor and pulse a few times if you don't want to mash them.

When meat is done, drain the meat.  Add back to pot.

Reduce heat to medium.  Add chili powder through cumin, along with some kosher salt and pepper.  Stir and cook for about a minute, to let all of the dry spices get incorporated into the meats.


Add the tomatoes, whole beans, smashed beans, beef broth, and V8 juice to the pot.  Stir well and taste to see if you need to add any salt or pepper.
Let simmer on low heat, covered, for at least 30 minutes and up to all day.  The longer it simmers the better it is, of course.

I love to chop up red onion and add a little to each bowl of chili.  It's always good to add something fresh like that to anything that cooks for a long time.  Chopped scallions are also great, or cilantro.  Grated cheese is another great thing to add to your bowl.  You can serve it with tortilla chips, some crusty bread or corn bread.

NARS Sheer Glow Foundation GOBI

I am not a big fan of foundation -- I just can't stand the feeling of makeup on my face -- and I almost always only wore tinted moisturizer, until I found this foundation. Wow! This is such a sheer feeling foundation but with very good coverage -- not full coverage but I would say a medium coverage. Your skin is just left with a beautiful, healthy glow and it evens out the skin tone. I absolutely adore this product and can't imagine ever living without it.

Origins VitaZing(TM) SPF 15 Energy-Boosting Moisturizer with Mangosteen 1.7 oz

When I don't wear foundation or am in a hurry and just want to even out my skin tone and look really healthy and awake, this is my go-to product. I love everything by Origins, but this has to be one of the best products they have. It's a wonderful moisturizer, but when you put it on there is a slight tint to it that evens out your skin tone and gives it a healthy glow, and you're getting your SPF at the same time! Who doesn't love that?! I don't know what it is about this moisturizer, but it just makes my skin look great and I love the way it feels on my skin.

It's A 10 Miracle Leave In Product, 4-Ounces

This one slipped in under the radar right at the end of 2010. I had asked someone what they put in their hair to make it so shiny and beautiful, and they told me "It's A Ten". I couldn't believe that's all it was, but now I do. This is an amazing product and basically replaces a ton of other hair products that I had and was putting in my hair each time I had to do it. Now I just need this one bottle!

Brushlab Fresh Ceramic Thermal Nylon Bristle Large Hair Brush

I had to include this brush in my top ten because it was a huge breakthrough for me in 2010. I have thick hair and it takes forever to dry, and when I'm finished I feel like my arm is going to fall off. This brush glides through my hair effortlessly, and dries it in half the time, seriously. I don't know how a brush can do that, but it does. I ♥ this brush!

MAC Blending brush 217

If I could only have one eye shadow brush to do everything, this would be it. This is simply an eye shadow brush that no one should be without. It's super soft but also quite dense, and it blends eye shadow perfectly. I really don't know what else to say about it.  You know how at Coldstone they have "like it", "love it" or "gotta have it"?  Well this is definitely a "gotta have it"!

ORIGINS INCREDIBLE SPREADABLE SCRUB GINGER 8OZ

I am big on exfoliating... BIG! I have tried so many body scrubs and nothing, I mean nothing, compares to this. This scrub isn't harsh, it gently exfoliates your skin and leaves it soooo soft and silky, vibrant, and smelling incredible. The scent is so invigorating.

MAKE UP FOR EVER Smoky Lash

There are several good mascaras out there, but this one takes first place for me. It only takes one coat to get thick, dark lashes. I'd have to say I haven't found a mascara that can get my lashes darker than this one; it is an intense black pigment. I love it!

Perfect Formula Pink Gel Coat 0.6 oz

My nails tend to peel and break no matter what I try to do to prevent it. This gel coat really helps get and keep my nails healthy while making them look beautiful. There's a brightener in this gel that makes your nails look really white and healthy, and at the same time giving them the nutrients they need. Definitely a can't live without product.

MAC Eye Shadow Frost Satin Taupe

I could literally wear only this color for the rest of my life and be perfectly fine with that. This color suits all skin tones and eye colors and is very flattering. It's a very pretty taupey brown. You can wear it alone on the lid or as a crease color... it's just gorgeous. I don't know what I'd do without this eye shadow.

Korres Lip Butter Glaze Jasmine

This really does feel like butter -- it just melts into your lips when you put it on, and it has a lot of staying power. This lip butter comes in different shades, but my favorite is Jasmine (a sheer pink). It just gives the perfect light pink tint with a bit of shine. And I also love that they're all natural. A must have, especially for dry winter lips.
